EVENING BITE

FLAGSHIP RED ALE USING CARAMEL RYE MALT

Ours is a Red Ale that strives to be as approachable as possible while maintaining the ever-necessary level of experimentation unavoidable at Side A Brewing.  

On the whole, any amber beer uses malts that have been dried to include a certain degree of caramelization.  Simply put, the sugars that would be used to ferment into beer are converted in the kiln, and the heat renders them unfermentable, leaving the finished beer with residual sweetness, a much richer body, and an imparted color.  Depending on the amount used, carmel/ crystal malts can make a sharply cloying challenge to drink, or a delicate complexity and something beautiful. The use of these malts has fallen off from what it once was industry-wide, but they are indispensable in a beer like a red ale.  

Contributions from hops, water, and yeast are all quiet, and allow the malt to speak the loudest.  It’s only mildly bitter from hot-side additions of (usually) Northern Brewer variety hops.  Basically every parameter is as middle-of-the-road as one can shoot for in a beer, and as the target is approachability, consumers tend to silently agree that the Evening Bite is at least close to the mark.
